Original Geneva end grain cutting board

Maple, cherry, hickory and white oak combine with a red grandis accent in the Original Geneva. Amish craftspeople in Northern Wisconsin make each board from 1.25-inch-thick solid wood, with an end grain cutting surface and a beeswax oil treatment. Natural grain and color vary, giving each Geneva its own pattern.

Five sizes, with one important difference

  • 9 by 9 inches: square, without rubber feet
  • 10 by 12 inches: rectangular, with rubber feet
  • 12 by 14 inches: rectangular, with rubber feet
  • 14 by 16 inches: rectangular, with rubber feet
  • 16 by 20 inches: rectangular, with rubber feet

Every size is 1.25 inches thick. The 9-inch square is the smallest option in this range and does not include rubber feet. Check your counter, sink and storage dimensions before choosing a size, and use the selector for current availability.

Compare the wood patterns

Geneva uses a red grandis accent within the mixed-wood design. If you prefer walnut accents or a walnut border, compare Williamsburg and Woodford in the Original collection linked below. Size options are the same across all three patterns.

Care for your board

Hand-wash with warm, soapy water, towel-dry and allow the board to air-dry on edge. Avoid soaking or using the dishwasher. Apply conditioner when the wood looks dry. Our cutting board care guide covers cleaning, oiling and storage; beeswax and mineral oil conditioner is available separately.

Daily Cleaning: After each use, remove food particles with a nylon brush or dishcloth. Wash with warm soapy water, scrubbing the entire surface, edges, and bottom. Rinse thoroughly, dry with a dish towel, then stand on edge to air dry for at least one hour. Never put your board in the dishwasher, soak it in water, or use steel wool or bleach, as these will damage the wood.

Regular Maintenance: Apply beeswax oil wood conditioner monthly or whenever the board appears dry or dull. After cleaning and drying completely, rub a small amount of oil into the entire surface including edges. Let it absorb for one hour, then wipe off excess. This protective barrier prevents cracking and extends your board's life by maintaining even moisture throughout the wood.

Proper Storage: Store your cutting board vertically or on edge in a well-ventilated area to prevent warping. Keep it away from heat sources like stoves and ovens, and avoid direct sunlight. Never use your board as a hot plate, as heat will damage the glue joints and over-dry the wood, causing cracks.

Remember: Wood naturally expands and contracts with moisture changes. The key to preventing cracks is maintaining even moisture throughout the board. Clean the entire surface (not just the cutting area), oil regularly, and allow proper air circulation during storage. With these simple care steps, your cutting board will remain beautiful and functional for generations.

WHY END-GRAIN?

End-grain construction keeps your knives sharper longer. The vertical wood fibers allow knife blades to slide between them rather than cutting through, reducing wear on your expensive knives while the board naturally self-heals over time.
